Honey

Honey of Ollolai
The richness of the naturally growing vegetation on the island guarantees a wide range of honey, both rich and unique in taste. There are many beekeepers on the island that produce honey and wax; in time this product has become commercial and the beekeepers have had to specialise and produce a wider range of products.

This sweet substance, produced by the bees has taken on many different flavours: orange, lemon; the unmistakeable asphodel, due to its consistency; rich in essence of 1000 flowers; eucalyptus balsamic honey which unites the typical chestnut, acacia and lime tree.
A characteristic honey is produced using the strawberry tree. It has a bitter strong taste, and is often mixed with dried fruit: walnuts, almonds or hazelnuts.

Its consistency is dense and sticky, its colour varies from a pale yellow to a reddish brown. Honey has always been used as a food; it is also eaten together with things that one would think was not possible, yet tasty, such as lettuce or with cheese-based Sardinian dessert “sebada”.
